Cold noodle dishes, in general, are popular in China, and most families have their own favorite recipe. The noodles are usually prepared with a slightly tangy sauce of sesame paste (or peanut butter), garlic, and scallions.<\/p>\n<h4>Ingredients (yields 4 servings)<\/h4>\n<ul>\n<li>2 chicken breasts, chopped, or 2 cups shredded cooked chicken<\/li>\n<li>1 scallion, chopped<\/li>\n<li>1 teaspoon minced ginger (optional)<\/li>\n<\/ul>\n<p><strong>Noodles<\/strong><\/p>\n<ul>\n<li>16 ounces fresh Chinese egg noodles (or spaghetti)<\/li>\n<li>1 cucumber, seeded and julienned<\/li>\n<li>1\/2 cup dry roasted peanuts, chopped<\/li>\n<li>1 scallion, chopped<\/li>\n<\/ul>\n<p><strong>Sauce<\/strong><\/p>\n<ul>\n<li>2 teaspoons sugar<\/li>\n<li>2 tablespoons sesame oil<\/li>\n<li>4 cloves of garlic, finely minced<\/li>\n<li>1 teaspoon minced ginger (optional)<\/li>\n<li>3 tablespoons rice or wine vinegar<\/li>\n<li>3 tablespoons light soy sauce<\/li>\n<li>1\/2 cup tahini sesame paste or peanut butter<\/li>\n<\/ul>\n<h4>Directions (20 minutes)<\/h4>\n<ol>\n<li style=\"text-align: left\">Cook the chicken: Fill a small pot with enough water to submerge the chicken breast (but don&rsquo;t add the chicken yet), and add the ginger and scallion. When the water comes to a boil, add the chicken, and bring to a boil again. Immediately cover the pot, shut off the heat, and let the chicken sit in the water for 20 minutes. In the meantime, prepare the rest of the ingredients.<\/li>\n<li style=\"text-align: left\">Prepare the sauce by combining&nbsp;all the sauce ingredients in a bowl.<\/li>\n<li style=\"text-align: left\">Cook the noodles according to the package. Watch the clock; don&rsquo;t overcook! Drain and rinse them thoroughly under cold water.<\/li>\n<li style=\"text-align: left\">If you&rsquo;re not ready to eat them right away, mix in about 1-2 teaspoons of oil to prevent the noodles from sticking together.<\/li>\n<li style=\"text-align: left\">Layer the noodles, chicken, cucumber, chopped peanuts, and scallion. Pour the sauce over everything and toss together. Translated from Swahili, &lsquo;sukuma&rsquo; means push and &lsquo;wiki&rsquo; means week. This traditional dinner gets families through the week. Silverware is not needed for this dish because the ugali should be stiff enough to pick up the sukuma wiki and put it in your mouth. It&rsquo;s often served with stew.<\/p>\n<h4>Ingredients (yields 4 servings)<\/h4>\n<p><strong>Ugali<\/strong><\/p>\n<ul>\n<li>2 cups vegetable or chicken broth<\/li>\n<li>2 cups water<\/li>\n<li>3 1\/2 cups maize meal (corn meal)<\/li>\n<\/ul>\n<p><strong>Sukuma wiki<\/strong><\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1 bunch (6 cups chopped) collard greens, kale, or spinach<\/li>\n<li>2 onions<\/li>\n<li>2 garlic cloves, crushed<\/li>\n<\/ul>\n<p><strong>Beef stew<\/strong><\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>2 pounds beef stew meat, cut up<\/li>\n<li>2 onions, chopped<\/li>\n<li>14-ounce can of diced tomatoes or 2 large tomatoes, chopped<\/li>\n<li>1 tablespoon tomato paste<\/li>\n<li>4 cups beef stock<\/li>\n<\/ul>\n<h4>Directions (20 minutes prep; 30 minutes cooking)<\/h4>\n<ol>\n<li style=\"text-align: left\">In large pan, in 2 tablespoons of olive oil, saute 2 chopped onions until tender.<\/li>\n<li style=\"text-align: left\">Add tomatoes, paste, and broth; cook on medium for 5 minutes.<\/li>\n<li style=\"text-align: left\">Add beef, cover, and cook on medium for 30 minutes as you prepare the rest of the meal.<\/li>\n<li style=\"text-align: left\">Put water and broth for the ugali in a medium pot and put on high to boil.<\/li>\n<li style=\"text-align: left\">While water is heating, heat oil to medium-high in large frying pan for the sukuma wiki greens.<\/li>\n<li style=\"text-align: left\">Chop the onions and saute them with the garlic in oil until soft, about 5 minutes.<\/li>\n<li style=\"text-align: left\">Chop the greens, the thinner the better.<\/li>\n<li style=\"text-align: left\">Add greens to the onions, lower heat to medium-low, and saute until tender, about 7 minutes.<\/li>\n<li style=\"text-align: left\">While the greens are cooking and once the water is boiling, add the maize meal slowly, stirring constantly with a whisk to avoid lumps.<\/li>\n<li style=\"text-align: left\">Cook on medium-low, stirring constantly, until the ugali begins to pull away from the sides of the pan and hold together, about 5 minutes.<\/li>\n<li style=\"text-align: left\">Place the ugali on serving plate; it will firm as it cools.<\/li>\n<li style=\"text-align: left\">Add salt and pepper to the greens, as needed, and serve.<\/li>\n<li style=\"text-align: left\">Serve beef stew on the side or over top of ugali &hellip; <em>hebu kula!<\/em><\/li>\n<\/ol>\n<h3 style=\"text-align: left\"><strong>Kenyan dinner prayer (Swahili)<br>\n<\/strong><\/h3>\n<p style=\"text-align: left\">Tubariki ee Bwana, na zawadi hizi zako ambazo tunazipokea kutoka kwa wema wako, kwa njia ya Kristo Bwana wetu. While cuy is available online for purchase in the U.S., you can always use chicken instead!<\/p>\n<h4>Ingredients (yields 4 servings)<\/h4>\n<ul>\n<li>4 cuy (or 8 boneless chicken thighs; dark meat retains moisture best)<\/li>\n<li>8 medium gold potatoes<\/li>\n<\/ul>\n<p><strong>BBQ Rub<\/strong><\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1 tablespoon salt<\/li>\n<li>1 tablespoon pepper<\/li>\n<li>1 tablespoon garlic powder<\/li>\n<li>1 teaspoon paprika<\/li>\n<li>1 teaspoon cumin<\/li>\n<li>1\/2 teaspoon cayenne pepper (more if you like it spicy)<\/li>\n<\/ul>\n<p><strong>Sauce<\/strong><\/p>\n<ul>\n<li>1\/4 cup toasted cornmeal<\/li>\n<li>2 cups chicken broth<\/li>\n<li>4 garlic cloves, crushed<\/li>\n<li>1\/4 teaspoon cayenne pepper<\/li>\n<\/ul>\n<h4>Directions (20 minutes prep; 30 minutes cooking)<\/h4>\n<ol>\n<li style=\"text-align: left\">Make your rub. Make sure to taste it before you put it on the meat, then adjust it as necessary for your family&rsquo;s taste.&nbsp; Most American BBQ is sugar-based, but this authentic recipe values heat over sweet.<\/li>\n<li style=\"text-align: left\">Rub the meat with your spice mixture and set it aside in air-tight container.
